first of with Outlook and a dial-up connection you might be better of using Windows mail and the only setting are to make sure the Windows mail is the default and sure you can try outlook just open it up and it will guide you thought setting up a e-mail account. Second did you upgrade to the full version having the trial version still installed in the system and if you did i think that is were you went wrong because according to the MS web site this info The free trial version of Office 2007 Home and Student Edition is not a qualifying product for upgrade to any Office 2007 edition.
The following products qualify for upgrade pricing to Office 2007 Standard Edition:
-- Microsoft Works 6.0–10
-- Microsoft Works suite 2000–2006 or later
-- any 2000, 2003, or 2007 Microsoft Office program or suite [except free trial versions]
-- any Microsoft Office XP suite except Office XP Student and Teacher.
If one of these products is installed on your computer, then you can get the Office 2007 Standard upgrade version. If not, then you need the Office 2007 Standard full version. This may pertain to your problem or not I am not sure but this is the info I have found doing a web search.
